Botanical Name: Pimpinella anisum L. Description: Anise is a seed-like fruit grown in the world's temperate climates. The seeds can be ground fresh, or used whole to add a warm, licorice-like flavor to your favorite dish. Suggested Uses: Anise seed is used extensively to flavor liquors, cookies, cakes, fruit dishes, coleslaw, rye bread, apple pie and meats. It also makes a wonderful addition to teas. Product Notes: Anise is a member of the Umbelliferae family which also includes fennel, caraway, coriander and dill, to name a few. It requires a long, warm, frost-free growing season of at least 120 days, and thrives in poor, dry soil. Growing to a height of 18 inches, the plant features small white flowers in early summer. The seeds appear in late summer and are light greenish-brown to brown when dried. Although the seed has an aroma and flavor reminiscent of licorice, the two are completely unrelated. Origin: Turkey Sourcing Notes: Believed to be native to the eastern Mediterranean region and western Asia, it is now widely cultivated in southern Europe, the Mediterranean region, the Middle East, India, Russia, Mexico and Chile. Currently, the highest quality organic seeds are grown in Turkey. Processing Notes: The dry, ripe fruits (seeds) should be harvested between July and September.
